Our Story.

Mark and Dylan met at Texas A&M University in the Corps of Cadets, where their first year was filled with “supervised character building” (definitely not hazing) and plenty of mandated sensitivity training. With little room for friendship or cross-class camaraderie, it wasn’t until the following year that the two formed a strong bond — one fueled by their shared love of craft beer.

After graduation, life sent them in different directions: Dylan headed to Fort Worth, while Mark and his wife, Samantha, settled in Dallas — each pursuing careers that aligned with their degrees… you know, the sensible thing to do. That is, until Samantha gifted Mark a homebrewing kit for his birthday. From that first humble batch bubbling away in a tiny apartment closet, a much bigger dream started to ferment.

Eventually, Mark and Samantha moved to the Texas Hill Country, where Mark continued teaching while picking up part-time shifts at a local brewery. One school year later, he took a leap of faith and pursued brewing full time. Since then, Mark has brewed professionally at two breweries, earned numerous awards, and proven that passion, persistence, and a lot of grain can take you far. Meanwhile, Dylan made frequent pilgrimages to the Hill Country to “research” local beer offerings — for science, obviously.

What started as a playful “what if” slowly turned into a business plan. And in April 2020, Lago Vista Brewing Company officially moved from dream to reality when we closed on the land for our future brewery. In true pandemic fashion, the overseas seller needed a police escort to the U.S. Embassy in Malaysia just to sign the paperwork. Casual, right? But that dramatic moment kicked off the journey.

The challenges didn’t stop there. We built during a pandemic. We navigated supply shortages, rising interest rates, shifting timelines, and more hurdles than we ever expected. But through it all, Mark, Samantha, Dylan, and Cheyenne kept going — driven by community, craft, and the belief that good beer brings people together.

We’ve traveled all over the world, and no matter where we go, the best conversations always seem to happen in a biergarten. So we set out to bring that feeling — that warmth, that welcome, that Gemütlichkeit — to the North Shore of Lake Travis.
